I was looking through recipes and found this, I'd forgotten how good it was, so made it to take up north with me. It's going to be a regular at our Florida happy hours. ( don't use olive oil, I tried it and it sucked).
Rice and Shrimp Salad
2 cups rice (uncooked) (I use minute rice)
¼ cup minced chopped green onion
¼ cup celery chopped
¼ cup semi-cooked peas
½ cup sugar
½ cup oil
1 tsp. (or more) curry powder
1 tbsp. Vinegar
1 tbsp. Soy sauce
1 or 2 cans shrimp if desired ( it's a must actually IMO )
Cook rice and while hot add frozen peas. (the recipe says to par cook them, I don’t I throw a small package of frozen peas in while the rice is hot)
Mix up the oil, sugar, curry, vinegar and soy sauce, add to rest
