I was looking through recipes and found this, I'd forgotten how good it was, so made it to take up north with me. It's going to be a regular at our Florida happy hours. ( don't use olive oil, I tried it and it sucked).
Rice and Shrimp Salad
2 cups rice (uncooked) (I use minute rice) ¼ cup minced chopped green onion ¼ cup celery chopped ¼ cup semi-cooked peas ½ cup sugar ½ cup oil 1 tsp. (or more) curry powder 1 tbsp. Vinegar 1 tbsp. Soy sauce 1 or 2 cans shrimp if desired ( it's a must actually IMO ) Cook rice and while hot add frozen peas. (the recipe says to par cook them, I don’t I throw a small package of frozen peas in while the rice is hot) Mix up the oil, sugar, curry, vinegar and soy sauce, add to rest

Sounds pretty good. Thanks for sharing that.
I think I can adapt it to our low carb life style by using Miracle noodles rice option and a few other minor adjustments to cut the carb count.
